If you interpret the story of Adam and Eve symbolically, why not take the story of the Resurrection symbolically?
I assume you use “symbolically” to mean that these stories aren’t told to report literal history that could be verified by actual witnesses. First, we believe and teach that both stories are in fact true in the deepest sense, meaning they reveal God’s will, purpose and power for all of creation. But the context of each story is different.
The nature of the Scripture’s witness invites us to see each of these stories differently.
